Italian Chicken

Ingredients:

For 3 servings you need:

Half a chicken breast in Milanese

6 peeled tomatoes (canned or fresh)

1/2 onion
-
1 Pepper
-
2 cloves of garlic
-
300 ml of chicken broth
-
Olive oil
-
Mushrooms
-
Olives
-
Capers
-
Tomato puree
-
Mascabado or sugar
-
Salt and pepper
-
Oregano
-
Basil
Procedure:
- In your Vital Blender, add the peeled tomatoes, onion, bell pepper, garlic, and about 50 ml of chicken broth. Blend the ingredients thoroughly until you have a smooth sauce.

Heat the 20cm pot of your Element cookware and add a splash of olive oil. Pour in the sauce and reduce the heat. Add the mushrooms, olives, capers, and the remaining chicken broth. Cover and let cook until the tomato begins to change color, becoming more intense. Add salt and pepper, tomato puree, and half a teaspoon of sugar or brown sugar. Cook for a couple of minutes and turn off the heat. Add oregano and basil, fresh or ground, and cover the sauce.

In the 26 cm skillet of your Element Cookware, add a little olive oil and cook the chicken breast. Add salt and pepper to taste and cook thoroughly on both sides.

Serve and top with the sauce. Garnish with fresh basil and freshly grated Parmesan cheese.
