Cream of broccoli with spinach

Ingredients:

For 2 servings you need:
  • 1/2 tablespoon of butter
  • 1/2 diced onion
  • 2 cloves of garlic, minced
  • 6 slices of leek
  • 2 handfuls of broccoli florets
  • 1 large handful of spinach
  • 100 ml of vegetable (or chicken) broth
  • 100 ml of lactose-free milk (or vegetable milk, of your preference)
  • Salt and pepper

Procedure:

  1. Heat your 16cm Lamex saucepan over medium heat and add the butter. Wait for it to melt and add, in this order: onion, garlic, and leek.
  2. Wait for it to brown slightly and add the previously washed broccoli, the spinach, the vegetable broth (we suggest not using chicken to reduce the fat, but it's a matter of taste), and the milk.

  3. Season to taste and let it boil while you mix all the ingredients.
  4. Turn off the heat and transfer the mixture to your Vital Blender and blend until well blended.
  5. Serve piping hot and garnish with croutons or sesame seeds. Enjoy!
