Tomato and Parmesan Soup

For those rainy days or for a comforting craving: this delicious tomato and parmesan soup!

It's super easy to prepare, nutritious, and one of those dishes that, as grandma would say, restores your soul to your body.

You need:
  • 16cm saucepan from the Onyx Battery
  • Butter
  • White onion
  • Pore
  • Tomato/peeled tomato
  • Vegetable broth
  • Muscovado sugar
  • Nutmeg
  • Salt
  • Fresh basil / bay leaf / herbs
  • Croutons
  • Parmesan cheese
Preparation:



Heat the 16 cm saucepan of your Onyx Cookware over medium heat. Add a cube of butter (if you want to make this recipe vegan or low-fat, you can substitute the butter with coconut or olive oil), wait for it to melt, and add the diced white onion. Then add the previously sliced ​​leek.

Let it sauté until they begin to lightly brown. Then add the peeled tomatoes: you can get them canned or use fresh tomatoes; if you're going for the latter option, choose ripe tomatoes. Stir in the ingredients and add vegetable broth; this step can also be substituted with chicken broth, if desired. If you're using vegetable broth, we suggest using natural broth; you can simply use the remaining water from boiling the vegetables. You can also substitute the broth with milk to make your soup creamier.



Add a pinch of muscovado and another of nutmeg. Season to taste with salt, pepper, and/or herbs such as fresh basil or bay leaf. Let the mixture simmer until the ingredients are well cooked, about 12 minutes. Remove from heat and pour the mixture into your Select blender . Blend well until all ingredients are well combined. Serve piping hot and add garlic or natural croutons and a little freshly grated Parmesan cheese for the perfect touch!
