3 express dinners (with lots of style)

Had a long day? Come home and don't know what to make for dinner? Here are three simple and delicious options for a comforting, healthy, and gourmet dinner.

1- Salmon tartare - ready in less than 10 minutes!



To prepare this tartar for two people you need:
  • an individual round mold
  • 400 g smoked salmon
  • 1 zucchini
  • 120 g of feta or panela cheese
  • A sprig of rosemary
  • 3 tablespoons of virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Half a crushed garlic clove
  • A tablespoon of orange juice
Preparation: Cut the smoked salmon and cheese into small pieces. Wash the zucchini thoroughly, leaving the skin on, and grate it. In a covered container, combine the oil, vinegar, garlic, and orange juice. Cover the container and shake until the ingredients are well combined. In the individual mold, add a layer of salmon pieces, a layer of zucchini, and another layer of salmon. Garnish with cheese and a sprig of fresh rosemary.

2. Green bean salad with cranberries, walnuts, and blue cheese

To prepare this delicious salad you need:
  • green beans
  • blue cheese (or the one you prefer)
  • blueberries
  • walnuts
  • coarse salt
Preparation: Cut the ends off the green beans and boil them for 5 minutes. Remember that it's not recommended to boil vegetables for too long, as they lose their nutrients; 5 minutes is sufficient. Drain, serve, and garnish with blue cheese, cranberries, and walnuts. Depending on the cheese you use, you can season with a drizzle of olive oil, salt, and pepper.

3. Mini eggplant "pizzas"



To prepare this super vegan-light version of pizzas you need:
  • 2 eggplants
  • 150 g. mozzarella cheese
  • natural tomato paste or sauce
  • fresh basil
  • salt and pepper
  • olive oil
Preparation:

Cut the eggplant into thick slices. Soak them quickly while you preheat the oven (you can also use an electric oven). Place the slices on a baking sheet and add the tomato sauce as a base. You can use pre-made tomato paste or make a super-quick homemade sauce with tomatoes, garlic, onion, and salt (simply blend the ingredients and cook for about 10 minutes). Add the cheese (preferably grated) and season with olive oil, salt, and pepper. Bake for about 5 minutes at 180ºC, until the cheese is golden brown. Carefully remove them from the oven and garnish with fresh basil. Ready!
