3 super easy recipes for this Christmas
Is Christmas approaching and you're hosting? Don't panic! Here are three super-easy recipes to make you look like a pro in the kitchen.
1.- Mini chicken and carrot ojaldritos
You need:
- 175 g shredded chicken
- 150 g of cooked carrots
- 1 onion
- 1 sheet of puff pastry
- 1 egg
- 2 tablespoons of olive oil
- Salt, pepper and aromatic herbs
- Sesame
Preparation of Chicken and Carrot Puff Pastries
- Peel and cut the onion into very small pieces.
- In a frying pan, heat the oil over medium heat and sauté the onion with a little salt until it crystallizes.
- Add the previously shredded chicken and stir the ingredients.

- While the chicken is cooling, mash the previously cooked carrots and season to taste.
- Prepare the dough as thin as possible and cut into 5x10 cm rectangles.
- To assemble the puff pastries, place a small pile of carrot paste.
- On top of the carrots, add the reserved chicken and onion mixture. Roll it up like cannelloni. Place it on your Texas Grill pan .
- Preheat the oven to 200ºC for about 10 minutes while you brush the mini puff pastries with a beaten egg and add sesame seeds.
- Bake for 20 minutes until golden brown and ready.

2.- Cucumber, salmon and cheese sandwiches
This appetizer is very stylish and super easy to prepare. You'll need:
- Two cucumbers
- Spreadable cheese or goat cheese
- Smoked salmon
- Capers (optional)
- Dill
- Olive oil
- Pepper
Preparation
Wash the cucumbers thoroughly and peel them in strips, leaving some with the skin on and some without. Cut them into slices about 1 cm thick. Layer the cucumber, cheese, and salmon on the base, and garnish with dill, capers, and pepper. And that's it!

3.- Walnut cream
This walnut cream is perfect for the colder months of Christmas; it has a delicious flavor that will comfort your guests. Making it is super easy; here's how:
You need (for 8 servings):
- 1 finely chopped onion
- 3 tablespoons of olive oil
- 1 tomato, ground and well strained
- 200 grams of chopped walnuts
- 6 cups of vegetable chicken broth
- 3/4 cup heavy cream
Procedure:
In one of your Lamex pans, heat the oil over medium heat. Add the onion and let it cook until it begins to turn translucent. Add the tomato and mix well. Let it cook for about 10 minutes, until it changes color. Add the broth and let it simmer for another 10 minutes. Add this mixture to your Lamex blender along with the heavy cream. Blend all the ingredients until smooth.
Serve hot and garnish with fresh parsley leaves or a couple of walnuts.
