Yogurt pancakes with blueberry

Ingredients:

  • For 6 portions you need
  • 1 cup plain yogurt
  • A splash of lime juice
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon butter, melted
  • A splash of vanilla
  • 1 1/2 cups of wheat flour
  • 2 tablespoons raw sugar
  • 2 teaspoons of baking powder
  • A pinch of lemon or lime zest
  • 1 / 2 teaspoon salt
  • 200g fresh blueberries
  • 1 tablespoon of chia seeds

Process:

  1. In a bowl add the yogurt, lime juice, milk, butter, eggs and vanilla. Mix very well until all the ingredients are well incorporated. Reserve.
  2. In a second bowl, add the flour, sugar, baking powder, lemon or lime zest, and salt. Again mix very well and add the first mixture that you had prepared. Mix the ingredients very well until there are no lumps. Add the blueberry and chia and mix again.

  3. Heat your 20cm frying pan from the Onyx Battery over medium heat. When the pan is very hot, lower the heat and add one or two ladles of mixture, enough to cover the surface of the pan.
  4. Wait for it to cook on one side and carefully flip it over. Wait about three minutes for it to be ready and serve very hot.
  5. Accompany them with honey and decorate with slices of lime or fresh blueberry.
